Mediterranean Express Buddah Bowl
This recipe is QUICK, EASY and incredibly HEALTHY via our friends @metroontario. Save this recipe for your next lunch or dinner (the vinaigrette is amaze-balls).
What you will need for the bowl:
1 c well-packed arugula
1 large avocado, cubed
1 c cherry tomatoes
1/2 c feta cheese
1/4 c pumpkin seeds
1/4 c kalamata olives
540ml lentils, rinsed/drained
300g yellow beets, rinsed/drained
*Top with your own choice of Greek vinaigrette, hummus, tzatziki, olive oil, balsamic, salt & pepper.
OR make this super simple Lemon Vinaigrette:
1/4 c plain yogurt
1/4 c olive oil
3 tbsp lemon juice
2 tsp Dijon mustard
2 tsp honey
1 crushed garlic clove
Salt & pepper
*whisk it all together, drizzle, enjoy!
