This vegan vanilla chocolate cookie dough is so insanely healthy and is perfect for a sweet treat at any time of the day. You can use any sweetener of choice (maple syrup, honey, etc.) but we opted for monk fruit to keep the calories as low as possible. If you don't have dates, that's ok too. Just add a little extra sweetener and another dash of almond milk. You can also use any type of nut butter, but it needs to be all-natural and smooth!
What will need to create The HEALTHIEST Edible Cookie Dough Recipe:
1 Can of chickpeas (strained and rinsed)
1/2 Scoop AURA Vanilla Plant Based Protein
1/2 Cup creamy almond butter
3 TBSP monk fruit sweetener
2 dates (soaked in warm water for 5 mins)
2 TBSP almond milk
1 TSP vanilla extract
Dark chocolate chunks (you decide how many)
What to do:
Blend everything together (except for chocolate chips) in a food processor or Vitamix. You will need to stop 1—2 times and press the dough down, then blend until smooth. Transfer into a bowl and fold in your chocolate chips. You could throw in some sprinkles for an edible birthday cake dough too!
